"Old Settler's Baked Beans
She served these at the Packers Game
This recipe is designed for a crockpot or slow-cooker.
"Old Settler's Baked Beans"
1/2lb to 1lb beef, chopped*(**)
8oz to 12 oz bacon, chopped*
1/2lb to 1lb thin sliced pork chops, chopped*
8oz Boiler Onions, peeled, whole***
2/3 Cup packed brown sugar
2/3 Cup white sugar
1/2 Cup ketchup (catsup?)
1/2 Cup BBQ sauce****
1 tsp salt
2 Tbsp prepared mustard
1 (16oz) can kidney bean
1 (16oz) can pork 'n beans*****
1 (16oz) can northern beans
1 Cup frozen Butter Peas
1 Cup frozen Large Lima Beans
Saute beef, bacon & pork (and onion, if using chopped
onion); then drain well. Place in slow cooker. Add
sugars, ketchup, bbq sauce, salt and mustard. Add
canned beans (do NOT drain) and frozen beans and
the raw boiler onions (left whole) - stir into other
ingredients. Cover and cook on LOW for 5 to 6 hours
or until think and hot.
This dish makes a great main meal... simply serve with
corn bread. Or make as a side dish! The dish is
GREAT for tailgating! :)
These Baked Beans freeze well, and taste great when
reheated.
*a total of 2 1/2 pounds meat - use whatever mix of
beef, pork and bacon you like
**beef pre-sliced for fajitas is what I use; also
recommended by the butcher is stew beef - however it
will fall apart as it cooks (I think this is OK - it'll give the
dish a different consistency)
***Boiler Onions can be found in the produce dept
where the jars of minced and chopped garlic are; they
are in little red mesh bags of either red (I like to use the
red), yellow or white boiler onions and they are by
"Melissa's". If you can't find the Boiler Onions or just
don't want to use them, substitute with one large onion,
chopped.
****I used Bull's Eye Original BBQ Sauce

BigCats Ass in the Bowl Wings
1. Get yourself some quality chicken wings...these are
normally in your supermarket's frozen meats section,
thaw the wings.
2. Get a tub of shortening...Crisco is fine.
3. Get a sealable container lage enough for the wings
you are preparing...you will
be shaking hot wings in sauce, so it has to seal well,
i.e. tupperware or the like.
4. Get the shortening hot in a suitable fryer...hot means
when a drop of water is
added, it explodes!
5. Place a portion of the thawed wings into the fryer and
cook until done...crispy is good.
6. In the container, add a stick of butter and melt in
microwave, or melt first on stove,
then add to container.
7. Add a capfull of vinegar..save the white wine stuff for
your wimpy gourmet crap.
8. Add a whole bottle of Frank's or Durkee Red Hot
Cayenne Pepper Sauce...Crystal
is fine too.
9. Add a small bottle of Tobasco Hot Sauce.
10. Now the Ass in the Bowl touch...Add a whole bottle
of Ass In The Tub Cayanne Pepper
Sauce (OUCH!)...available where you buy hot stuff
11. Mix sauce well.
12. Add wings from fryer to sauce, cover and shake
well.
13. Place coated wings on a baking dish and place in
a warm oven, i.e. ~200F, to dry wings
a bit.
14. When all wings are finished, eat them!
15 Then prepare for the onslaught. You have been
warned.
